I have created a cert for a subdomain portal.ridgetop.co.za by going through Custom Domains and SSL Certificates · Fly Docs. Everything looks to be setup and verified in the cli and the Dashboard, but when I go to the subdomain nothing shows up. Looking at the certs and DNS everything is in order, I’m not sure what I’m missing.

I would suspect this is because you have a “.” in the app’s name. Unless things have changed, I don’t think that is allowed 
. Since the app’s name is the sub-domain of fly.dev so e.g app-name.fly.dev.
If I look up the DNS using e.g Dig (DNS lookup)
portal.ridgetop.co.za returns a CNAME to portal.ridgetop.fly.dev.
But portal.ridgetop.fly.dev … does not return any DNS result. Hence your browser being unable to find it.
In which case the solution is to name your app e.g portalridgetop, portal-ridgetop or something like that and so you would then have a valid name.fly.dev subdomain to route to.
