Is it possible to use elasticsearch with multiple replicas on fly?
Yes that should be fine. Pretty much anything you can put into a docker container will work on fly.

Do I just use a docker container like in K8’s? Is there anything special I need to do before flying?
I am trying to get elasticsearch to work on the fly. So far, I have received permission errors on accessing the data directory.

I tried to add permissions and create the directory by modifying the Dockerfile.
